Definitely dithered. The undithered option is great for people who want it. But dithered is the way to go for me. The atmosphere seems darker sometimes and more grainy in others which works really well for games like Colonel's Bequest for the former and just for plain detail in the latter.

I like undithering for the most part, but sometimes it doesn't look right. It's still a good option to have as long as people can choose whether to turn it on or off.
