MK1 did have "shoddy" graphics - but it was the first fighting game that featured "realistic" looking characters. So I am not surprised to think the graphics might have been "shoddy."
It also gave us fatalities...!
So both of those things were what hooked me for MK. And yes, I also think the Goro fight was much harder than the Shang Tsung fight.
As for Street Fighter... SFII was arguably the best version of the game back then... until Street Fighter Alpha, which then introduced my favorite to use - Dan.

I understand it was the first of its kind. It was important. But MK2 was so much better.

I think they continued to improve (by adding more characters, fatalities, Friendship, Brutalities, etc). I think the only MK I didn't enjoy was the one when they introduced the Dragon King dude... Didn't seem to fit anything.
There was another one (might have been the same one?) - where they tried to make MK, more 3D (so you could move side to side, not just front and back) which I didn't care for.

MK1 was a classic, MK2 peaked, MK3/UMK3/MKTrilogy kind of went really out there for me but it was still recognizable. After that they went 3D with MK4 and it was totally unrecognizable. And it just continued to get more and more zany with Deception, Shoalin Monks (which was a beat-em-up game I think rather than a fighter), a Sub Zero game I believe, until Armageddon which was the last one before MK9 and it didn't do very well either. MK9 then came along and rebooted everything literally by altering history and starting from scratch. It was told in such a cool way too by starting off at the end of Armageddon. Also went back to standard 2D plane fighting at that point which was perfect. I think before then all the fighters since MK4 were all 3D planes. 3D fighters suck. Can't think of a single good one.

I've actually never played Shaolin Monks (and apparently it is not considered "in continuity" - which is funny coming from MK). And I agree - I get the idea of doing a 3D fighting thing, because it makes it feel more ... real and... open?... but I couldn't stand it.
I think the only 3D fighting game I ever enjoyed was TEKKEN, and that's because that's what it always was. But if I had a choice between MK, Killer Instinct, Street Fighter, Primal Rage, or TEKKEN... Tekken would always be last.

Star Wars Masters of Teras Kasi is also 3D. It's a terrible fighting game but I have fond memories of it. Loved unlocking ROTJ Luke with the green saber and playing against Darth Vader with a friend. Good times.

It was a horrid game, but I played the hades out of Star Wars: Masters of Teras Kasi. Back in the day, I used to do a thing called "Nexus Battles" (my BBS was called The Nexus, named after The Deathgate Cycle books which I was - still am - obsessed with) - and used MK exclusively, pretty much - until the last one - which I used Star Wars: Masters of Teras Kasi. (The links to the previous MK ones are linked there too). It was stupid and silly, but a fun thing I did for the users of my BBS. Is there such a thing as Mortal Friendships? For instance, giving your opponent a present or a flower instead of "finishing" them?

So far I haven't found MK11 to be as interesting as MKX (aka MK10) for some reason or another. Not sure why, really, but MK11 seems to lack something that MKX had. It's still a decent-to-good fighting game, but I think prefer MKX overall.
Oh, and Rath? Arcades still exist. There's one here in Victoria, BC called Quazar's Arcade and it's full of older arcade games, ranging from stuff like Galaga to games that were popular in the late 90s. It also has a ton of pinball machines.

So - if you're playing MK11 - have you gotten the latest batch of people they released for DLC? (I've not... I've barely gone back to touch MK11 after beating and unlocking some Krypt items) - but one of the characters they brought back in a DLC is Nightwolf, which I loved playing back on MKIII. I am not sure if the DLC that includes him costs anything (I am sure it does) - but I keep considering loading up MK11 and seeing about doing just that...
