Blue = Sciences
Red = Security / Engineering / Operations
But by the time of The Next Generation (TNG), they changed red and yellow:
Red = Command / Navigation
Blue = Sciences
Yellow = Security / Engineering / Operations
HOWEVER, you will find exceptions in TNG where some characters wear a color that doesn't appear to match their occupation...

Merry Christmas! I'm still 22 minutes away here so I'm off to bed real quick (long day of prep, we're hosting Christmas dinner this year for my parents for a change in our new house we just moved into). Hope you guys enjoy your holidays.

And just to make matters more complicated... in TOS the gold shirt wasn't even gold (or yellow). Oddly enough, Kirk's dress uniform and wrap-around variant uniform — both of which he wore at least once — actually showed up as lime green (probably due to the material being different) on TV and likely confused more than a few viewers.
Whatever the case, gold eventually became canonized as the color of command in TOS instead of lime green, so you'll never see a TOS-era Command shirt in its original color. In future shows (such as a DS9 episode where some members of the DS9 crew time travel and have to blend into the crew of the TOS-era Enterprise) the Command shirt was shown as gold because by that time that's what people expected.

I was actually surprised to learn they were originally green. The color was "changed" to gold/yellow as early as the Star Trek Animated Series. The animators thought the uniforms were yellow and used that color for the paint.

On a more serious note, I wasn't able to share Christmas dinner with family because at the concerts I did, at St Paul's, someone attended with COVID and didn't tell anyone. I've no idea if he/she was someone from the choir(s) or from the audience, but it doesn't matter.
As a result, all three choirs and the entire audience had to go and be tested. I didn't hear about it from the Department of Health until Thursday afternoon, five days after the concert and the day before Christmas Eve. First thing after breakfast on Christmas eve, I went and got tested, but I had to be isolated the entire Christmas weekend and so missed out on Christmas Eve dinner with family.
P.S. I tested negative, so I'm OK. But I'm still angry at that selfish so-and-so who put us all in danger.

My nephew's wife (who is pregnant) - and her mother and father were at my sister's house (which had my sister, her husband and my mother) - turns out, she has COVID.
As does her parents, who also came over.
No idea who had it first - but now my sister, brother in law, and mother all need to get tested. And my mother has numerous health issues.
So now I am stressed.
