In fact, I have MUNT [MT32] and VirtualMIDISynth [GM] set up in DOSBox so I can play games specifically composed for either -- early games for MT-32, newer games for GM.

I'm not sure which is more accurate of the two SC-55 soundfonts to be honest. I don't really use Soundfonts because I have the real deal. I've had a stigma against Soundfonts for years. However, I do have one. It's just named SC-55.sf2 and I don't remember which one it is. But it's 45.1 MB. It's not totally accurate with some samples, but it mostly does a good job.

I've collected a number of SC-55 sound fonts over the last 5+ years, and the particular one you mentioned (45.1 MB) is also a good general purpose candidate.

Tawmis -- Not sure if your are familiar with SoundFonts, but you will need to use them in conjunction with the GM VirtualMIDISynth software synthesizer (among others).
Created by Creative Labs in the late 1990s, you can think of them as fonts ("collections of sound samples") to display ("play") your GM MIDI files. You can switch out SoundFonts to give a GM MIDI file different audio qualities, much like you can use typographical fonts to give the written word a different visual appearance.
Some SoundFonts strive for true hardware replication and high accuracy, while others focus on realism by sampling actual real-life instruments. Most SoundFonts fall somewhere in between, but the advantage is that the MIDI playback is not limited to a single set of samples like with the MT-32 synthesizer.
In the end, there is no "right" or "wrong" choice -- only personal preference.

I very rarely fire up my MT-32 because Munt is so close to the real thing I would rather save the wear and tear on my real unit. However, if I had a Sound Canvas I would probably not withhold it so much. I have not heard any software solution that sounds right.
