Slay The Spire?
No, that's not it. The game I'm thinking of was released more recently and was heavily influenced by StS as well.
BTW... I like how you split Slay the Spire's name/links between Steam and GOG.
Verifying I did my research.
So I know more recent than 2000 - and more recent than Slay the Spire.
I've never played STS - so I am not sure what it's like other than a "rogue-like" "deck builder."
Well I played Old school Rogue a ton (and none of these games remind me of Rogue)
Where's my primitive graphics being chased by letters of the Alphabet!
And not done any Deck Building games; computer or live (never did MTG or anything - well, played it once...)
So I am treading (drowning?) in unfamiliar territory.
So going to make another direct guess - before stepping back to swing a wider net.
Is it Monster Train?
(The only thing that makes me doubt that's a yes; you mentioned Steam and Gog; which it was - but this was also released on consoles...)

Yup, it's
Monster Train! I didn't know it was also on consoles as I've only played the PC version on Steam. It's a fun game; a little weird, at times, but fun.

No, wasn't LucasArts either. I remember when I played this game, I was a bit surprised. Because I'd known the company for essentially making games, where you'd race muscle cars around a mountain range.
