Is there a list anywhere of every game ever made by Sierra? I keep hearing about new ones that I never knew existed, but I haven't been able to find anywhere a comprehensive list of every game published by Sierra.

Depends on what you call a Sierra game. Throughout the '00s it was not much more than a label to slap on someone else's game. Ken Williams, the founder of the company, and many of the Sierra fans considers any game Williams help bring to market a Sierra game. This means any of the Sierra games from the beginning to when the company was sold in the mod to late '90s. From his website:
