I think I know:

Are you the rose in PQ3?

I am cut short of my life
But not by a knife

You generally cut flowers with pruning shears, not a knife.

I did not bleed red
But red is on my head

Roses are red...

If you use me twice
Things won't turn out so nice

Giving Marie a second rose causes that bug where you fail to see the good ending.
