I never did care much for the third game, for much of the same reasons you cite.

Does it have some more of that infernal trial and error gameplay?

It has been a while since I have played, but HoF seemed a lot less random. You have a better sense of what you are trying to do. Plus, it has a better flow to it.

HoF is easier (but still pretty difficult - was it the 1st or 2nd one where there's those gems and they have to go in a specific order on the slab?)

Yeah it was the first game, with the gems.
Trial and error is easy, but tedious. But easy. I learnt it from all that jigsaw-solving I used to do: eventually you'll get a lot of "sky", and when you've reached that point, you sort all your pieces by shape, and systematically try to fit them in.

That volcano section when you're walking around on the island looking for stuff to buy entry to the underground, man that's annoying! But I did chuckle at the petrified wood.

As BBP said, the first. But that was the hardest thing about the first. No way to logically determine the order, so the hardness was just the tedium of trial and error. In HoF you had a better idea of what you needed to do, which I suppose makes a game seem easier.

Yeah I hated that puzzle. That's burned into my mind, much like Codename: Iceman with the sub sequence. One day, I really do need to set some time aside to finish Codename: Iceman...

I found LoK a little more difficult than LoK2. The puzzles seemed a little... stranger. Perhaps because it's Malcom's POV.

I STILL don't know how I got that plant to grow in LoK 1: didn't get that from a walkthrough.

You have to put an acorn, a walnut and a pinecone in a hole in the ground of the Dead Woods, that grows a plant, and then the bush gives you healing powers.

... Looks great but don't care much for the puzzles (Hanoi is a bit of a snooze puzzle once you've figured it out), story, characters, acting or music. Not bad, not great.

"Not bad, not great" could pretty much describe the whole series. Still, an enjoyable diversion. I had forgotten about the Hanoi puzzle.

I will need to replay the entire thing (when I have freaking time) - but I remember pretty much enjoying the entire series. Even LoK3, which I recall being a bit odd.
